It’s missing a few things such as black pudding (blood sausage), fried bread (lightly fry a couple of slices of white bread in very shallow oil or the fat from the sausages).
Also for a Scottish twist you may want some lorne sausage (aka square sausage) which is essentially sausage meat in a square pattie.
I vary mine to whatever I have ready in the fridge.
